Gluten free Banana Cake
Ingredients:
½ cup softened butter
¼ cup brown sugar
2 eggs
½ teaspoon bicarb soda
½ cup buttermilk
2-3 ripe banana
¼ teaspoon vanilla
2 cups gluten free flour
Method:
Pre heat oven to 180oC
Grease and flour or line loaf tin.
In a large mixing bowl cream the butter and sugar.
Add eggs, beating well after each addition.
Add bicarb to milk.
Mash bananas in a separate bowl and add the milk and mix.
Add the banana and milk mix to the egg mix and beat until combined.
Add vanilla.
Fold in the flour – stirring gently until all ingredients are just combined.
Spoon batter into tin and smooth the surface.
Bake in the preheated oven for 45-50 minutes or until cooked when tested with a skewer.
Cool in tin for 5 minutes before turning out onto a wire rack to cool completely.
