Other: 2 medium Granny Smith apples, peeled. Dice one apple and slice the other.
Method
Heat oven to 180° and line a 12 muffin tray, set aside. Dice 1 apple, melt coconut oil, and gather ingredients. Add dry ingredients to large mixing bowl, set aside. Whisk eggs, add coconut milk, coconut oil, vanilla extract, and ½ the diced apple. Add wet ingredients to dry, mix well. Add honey and ½ the diced apple (you now have used the 1 whole apple), mix well. Pour batter evenly in muffin compartments. Top batter with sliced apple and a dash of cinnamon. Bake for 15-20 minutes or until golden brown. Enjoy warm or pop into lunch box if any are left.
